About Yin Hao Jasmine - Scented Chinese Green Tea
This tea is grown in the Fujian province of China at an elevation of more than 1,500 feet. It is harvested in the spring (April and May). The leaf bud and first and second leaf off the shoot are plucked, allowed to wither then heat-dried. Then the tea is stored until the Night Blooming Jasmine blossoms mature, which is in late summer. The blossoms are picked during the day, before the flowers open, mixed with the tea and heaped into a pile. The pile of tea and blossoms is covered with large sheets of rice paper and allowed to sit over night. During the night the blossoms open and the tea absorbs their fragrance.
In the morning the tea is separated from the flowers and heat dried to remove any moisture it may have absorbed during the night. This process is repeated at least five times. The end result is a fragrant and delicious cup of Jasmine green tea.
Yin Hao is also the favored tea of James Bond, the literary character created by Ian Fleming.
